Good Eats - Carnitas Taco Night

Carnitas 
...Mexican Spiced Roasted/Browned Pork

Saw a beautiful cut of pork roast at the market.
Remembered I had avocados and marinated green chilies at home.
Thought what a great idea to put a hunk of meat in the oven and have food for 3 days!

Carnitas - Genius...

You can cook this in the oven (method shown), or you can put it in the crockpot. Either way, your kitchen will be filled with the aroma of cumin and orange peel. Yummy!


Carnitas Recipe

2 to 3 lbs of boneless pork shoulder
1 to 2 Tbsp of Cumin (I love cumin so I often put in another dash or 2)
2 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon paprika
2-3 teaspoon sea salt
1 teaspoon black pepper
4-6 cloves of crushed garlic
1 onion thinly sliced
1 medium orange sliced
3 oz of orange juice
1 tablespoon of apple cider vinegar
Put all ingredients into a large container 
Marinade overnight in refrigerator.

Cooking Methods:
Oven
-  Put meat on roasting rack. 425 degree 15 minutes then reduce to 325 degree and cover with foil for another 1 ½ hour.
Crockpot
- Sear the meat, add 12 oz of beer or 12 oz of chicken stock. Cook on Low for 8-10 hours

I put the orange slices in the oven to enhance the orange flavor.  It's subtle, but definitely noticeable.
 
Add Tortillas & Rice to Complete the Spread
Dinner is Served
