Good Eats Monday...Fresh Strawberry Pie


Fresh Strawberry Pie – Irresistibly Good

Ingredients:
1 (9 inch) pie crust, baked
1 ½ quart fresh strawberries
(Set aside enough to mash up to 1 cup for the glace)
¾ cup white sugar
3 tablespoons cornstarch
¾  cup water
¼ tsp salt
1 tbsp lemon juice
1/2 cup heavy whipping cream                                                                   


Directions:
Arrange strawberries in baked pastry shell.
Mash up the berries for the sauce
Combine water and cornstarch until dissolved and no lumps
Add sugar, salt, and the mashed strawberries in a medium saucepan
Place saucepan over medium heat and bring to a boil, stirring constantly
Cook for 2-3 minutes, sauce will thicken quickly
Remove from heat and add lemon juice
Set aside to cool
Pour mixture over berries in pastry shell.
Chill for several hours before serving.
Serve with whipped cream.

Note:
I prefer halved or sliced berries and mix them with the glace before pouring everything in the crust.
Also, a delicious trick for not getting the bottom of the crust soggy is to melt 1 cup of chocolate chips and then pour over the bottom of the pie. Let it set before putting the strawberries in.
