Good Eats - Stuffed Pumpkins - Sweet & Savory

Baked Stuffed Pumpkins

Sweet or Savory
Couldn't Decide...Make Both

The Sweet...
Baked with a Brown Sugar Ginger Custard

The Savory...
"Whatever you have on hand...Dump them in"
bread, rice, cous cous, etc.
cheese of your liking; herbs and spices; aromatic veggies; meat filled or vegetarian; as you like it...

Stuff...Bake...2 hours later...Beautiful, Glorious, Shinny, Oh So Yummy, and "It's not pizza" Halloween Dinner!

Sweet:

1 fresh sugar/pie pumpkin, 2 1/2 to 3 pounds
1 tablespoon grapeseed oil
2 tablespoon brown sugar
Pinch cinnamon
Pinch salt

For the brown sugar egg custard:
12 ounces evaporated milk
2 whole eggs
2 egg yolks
3/4 cup brown sugar
1 teaspoon vanilla
1/2 teaspoon pumpkin pie spice (or just cinnamon is fine)
1/2 teaspoon ground ginger

Preheat the oven to 350F.

1.Wash the outside of the pumpkin very well. Carefully insert a knife into the flesh to cut out the 'top'. Remove and discard the seeds, making sure to clean out the stringy part.
Rub oil inside and outside of the pumpkin, sprinkle brown sugar, cinnamon and salt inside.

2. In a saucepan, bring the evaporated milk and brown sugar to a simmer.
Cook over moderate heat, stirring until the sugar dissolves. Remove from heat and let cool for 5 minutes.

3. In a separate heat proof bowl, whisk the eggs, egg yolk, vanilla, pumpkin pie spice and ground ginger. Slowly whisk the hot milk into the egg mixture.

3. Pour the custard into the prepared pumpkin. Replace the top and wrap the entire pumpkin with heavy duty foil.
Bake for about 1 ½ - 2 hours, until the custard is set.

To serve, using a big ladle, scoop out cooked pumpkin along with custard. 
Serve hot (let rest for 10 mins) or cold, refrigerate overnight after it’s cooled.
Top with whipped cream and a sprinkle of cinnamon.

Savory: (this is very free form, put whatever you have on hand into this)

1 pumpkin (any baking pumpkin), about 2 1/2 to 3 pounds
1 table spoon of olive oil
1/2 teaspoon of sea salt
1/2 teaspoon of pepper
4 ounces stale bread (I used toasted garlic bread), cut into 1/2-inch chunks
4 ounces cheese, such as Gruyere, Swiss, Blue, Cheddar or a combination, cut into 1/2-inch chunks
2-4 cloves minced garlic (to your taste)
1/2 teaspoon of dry herbs (thyme, tarragon, rosemary, etc) or 1 teaspoon of fresh herbs
1/4 cup chopped onion
1/4 cup diced pepper (roasted ones are even better)
Salt and freshly ground black pepper
About 1/3 cup heavy cream
Optional: 3 oz of sausage, round meat, bacon, etc.

Preheat the oven to 350 degrees F.

2. Sautee all the aromatic together (garlic, herbs, onion, pepper, whatever you have on hand)

3. Tossed aromatic with bread and cheese, add in the cream at the end

4. Stuff the filling into the prepared pumpkin. Replace the top and wrap the entire pumpkin with heavy duty foil.
Bake for about 1 ½ - 2 hours, until the pumpkin flesh is tender.

5. Let cool for 10 minutes before serving.

Be a Part of It...Community is Good For Your Health!

It's Proven...
Being a Part of a Community is...GOOD for your Health.

Will have to keep it short and sweet today.
Is at an all weekend conference of Ethical Practice of Psychology and Psychotherapy. (yes, fulfilling requirement for licensure renewal)

Today there were debates on "To Medicate or Not To Medicate."

There were very convincing data showing that a genuine and trusting therapeutic relationship can be just as effective and maybe more effective than antidepressants.

Studies also showed that being active and engaging in a community of relationships on a routine basis allow a healthier mentality and emotional health.

I guess today's encouragement is to invest and to keep up on your relationships, friends, family, faith community, interest groups, etc.

Relationships are good for your healthy and keep you sane!

Movie Night - The Spitfire Grill

A movie of Second Chances...

Surely I had watch it before, but in re-watching it, it goes beyond the plot.

Percy Talbott, a young women just released from prison, goes into a small town named Gilead to rebuild a life. Even with a rough start, what she found was much more, including friendships and hope.  Yet what she was able to bring to town became more valuable than it realizes.

Alison Elliott was wonderful, an artfully searching spirit.
Yes...it's a bittersweet tearjerker.
But, so worth the 3-box tissue award.

The beauty is in the hopefulness, beyond the cynical, ignorant, careless surroundings. It is a reflection and a comparison of those who are cognizant of the values in life and those who pass life by every day without noticing a thing.

A Positive Attitude is a Powerful Force...

Speech Contest 2011

Once a year, our school host a speech contest for students 3rd - 6th grades.  This year's theme is "A Positive Attitude is a Powerful Force."

My older one jumped at the chance and signed up for it.
Funny thing is that public speaking makes him nervous, a bit anxious and create a lot of self-doubt.  Why he continues to do this, I don't know.

Maybe it's because that he is actually very very good at it.  He is an excellent speaker once he gets over his nerve.  He has very good content when he is able to focus and not be distracted by every item he finds on google or youtube.

Today is the first round and if he gets selected, Thursday evening will be the final round with judges coming in from the community. Regardless of today's outcome, he is a winner in our eyes.

So this is his abbreviate outline to his more detailed speech :

Good Eats - Pumpkin Mini Cheesecakes

Pumpkin Pumpkin Pumpkin - For October!

Say Yest To - Pumpkin Mini Cheesecakes


Mini Pumpkin Cheesecakes

Ingredients:

Crust:
1 1/2 cup (100 grams) Ginger Snaps cookie crumbs
1 tablespoon (15 grams)  granulated white sugar
4 tablespoons (55 grams) unsalted butter, melted

Filling:
2 - 8 ounce (454 grams) packages of cream cheese, room temperature (use regular, not reduced or fat free cream cheese)
2/3  cup (130 grams) granulated white sugar + 2 tablespoons (reserved)
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1 teaspoon cinnamon
¼  cup sour cream
¾ cup pumpkin puree
1 teaspoon pumpkin pie spice
¼ teaspoon grounded ginger


Directions:

- Line 12  muffin tins with cupcake liners
- Preheat oven to 300 degrees F (150 degrees C) and place rack in center of oven.
- For Crust:
1. In a small bowl combine the cookie crumbs, sugar, and melted butter.
2. Press about a tablespoon of crumbs on the bottoms of the 12 muffin cups lined with parchment paper. You will have left over crumb mixture.
Cover and refrigerate while you make the filling.
- For Filling:
1.Beat the cream cheese with an electric mixer, on low speed until smooth. 
2.Add the sugar and beat until combined.
3.Scrape down the sides of the bowl and add the eggs, one at a time, beating about 30 seconds.
4.Add the vanilla extract, cinnamon and sour cream and beat until incorporated. 
5.Divide the filling into half.
- Remove the crusts from the refrigerator and use half of the filling to fill the 12 muffin cups.  Put back into refrigerate.
          6. Add Pumpkin puree, the reserved 2 tbsp of sugar, pumpkin pie spice and ginger to the other half of the filling. Mix just until incorporated.
          7. Fill the muffin cups evenly with the pumpkin filling.
          8. Sprinkle the top with the left over crumb mixture.



- Bake for about 20 minutes or until firm but the centers of the cheesecakes still wobble a little.
- Remove from oven and place on a wire rack. Let cool and then cover with plastic wrap and refrigerate (a few hours or overnight).
- Serve with a dollop of whipped cream

Makes 12  - 1/2 cup cheesecakes.

Fun Thursday - From Veggies to Civil War


We are a family of "Brown Thumbs."

So we love going to pick your own fruit and veggies farms.  We feel more alive and productive.

Good Eats - Tomato Shrimp Salad with Heart of Palm Relish

Tomato Shrimp Salad with Heart of Palm Relish
This is my way of,
Stretching the last taste of Summer... 
with heirloom tomatoes, ripe avocado, tender shrimps in a wonderful heart of palm relish.
Tarragon is my go to herb with tomatoes.  Love the stuff!


Hearts Of Palm Relish

6 ounces (1 1/3 cups) hearts of palm, drained, rinsed and diced
6 ounces (1 1/2 cups) artichoke hearts, drained, rinsed and diced
1 tablespoons chopped red onion
3 tablespoons diced roasted red bell pepper
1 tablespoon chopped parsley leaves
2 tablespoons tarragon (red wine) vinegar
3/4 teaspoon kosher or sea salt, or more to taste
1/4 teaspoon sugar, or more to taste
1/4 teaspoon black pepper, ground, or more to taste
3 tablespoons olive oil

In a bowl, mix the hearts of palm, artichoke hearts, red onion, red bell pepper and parsley.
To prepare the vinaigrette, pour vinegar in a small bowl and mix it with the salt, sugar and black pepper. Pour the oils in a slow stream, whisking with a whisk or fork to emulsify. Pour it over the vegetables. Toss well to cover.
You may prepare the hearts of palm and artichoke salad ahead of time, cover and refrigerate for up to 2 days.

Marinated Tomato Salad
Two servings

Although this tastes great using fresh, in-season tomatoes, it also transforms ho-hum orbs into something much better. Let them marinade a little bit first, up to an hour beforehand. But for really good tomatoes, I simply toss and serve right away. A good rule of thumb is the better the tomatoes, the less you need to marinate 'em.
Either way, you can marinate the shallots hours ahead in the vinegar with some salt as the shallots as they only get better and mellower after an hour or two. Then go ahead and put the rest together whenever you want leaving you time to do something else. Like read your mail...if you're lucky enough to get it.

1 small shallot diced
2 tablespoons red wine vinegar
2 gloves of garlic minced
2 teaspoon dry tarragon (1 tablespoon fresh)
3 tablespoon extra-virgin olive oil
salt and black pepper
4-5 medium tomatoes cut into bite size

Mix all ingredients except the oil and the tomatoes in a non-reactive (glass) bowl, let stand a couple of hours.
Stir in the olive oil.
Toss in the tomatoes.
Refrigerate 30 mins before serving

When Ready To Plate: 6-8 Servings
 Use a 3-4” round cookie cutter, layer the ingredients in this order.

- 2 ripe Haas avocados,  (bottom)
Mash with 1 teaspoon of sea salt and juice of 1 lime

- Heart of Palm Relish

- 8 oz cooked and chilled shrimps

- Heirloom Tomato Salad (top)

Wishing...Not To Be...So Myself sometime!

The "Self"...
the personhood, the identity, the "who am I"...

For the most part, I am "good with" who I am.

Then there are the few pieces of me that I continually wish that they would disappear.

After years of "working on" & "working through" my life, the "self" is no stranger to me.

I am pretty much a definitive "INFJ" on the Myers-Briggs Personality Typology.

Being married to a primary "INTP" and,
Having a almost for sure "ENFP" first-born & a too young to tell, but mostly "ISF(T)J" younger one are not easy on my INFJ personality.

I am looking for system when this is a phase of chaos.
I am obsessed with prioritizing tasks, values, goals, etc. and 50% of the family is not so much.
Yet my closet is in a consistent mess that I feel like it's growing by the second.
Majority of the time, I am so easy going, then out of some instinctive urgency, the critical voice would shout a laundry list of unfulfilled expectations toward me and through me. (my poor, poor family!)

Worst of All...
As much as I work at being a loving and consistent parent to my kiddies, I can't help but to "Push" them to be the best that they can be (years ahead of their time)!

So Here is A Good Reminder to Lighten Things Up:

Fun Thursday - It's Pumpkin Patch Time!!!

I get very excited this time of year.
Pumpkin Picking
Pumpkin Carving
Pumpkin Pie
Pumpkin Cheesecake
Pumpkin Latte
(I shall not go on...but I could)

There is something about the bright beautiful orange color that indicate Autumn is finally here (in L.A.).

We have pictures of the kiddies since they were babies at a pumpkin patch.  We used to have to place them on top of the pumpkins, then they sit in the midst of the field.  Now they are holding the ones they picked.

Here are a few Suggestions:

Up where we live in Santa Clarita...It is a tradition THE Tradition to go to Lombardi Ranch.
Everybody does it...I do mean everybody.

Movie Night - The Little Shop of Horror

What Can I Say?...It's October!

Be it the theatrical play that local theater groups put on, the original black/white movie (with Jack Nicholson as the dentist's patient) or this 1986 movie version, who doesn't love the "man eating plant" and Seymour?!

Love a musical, Love the funny thoughts & ideas...yet, there is always a little bit more that indicates life in the reality of the presence.

It's 2011 and we can relate to feeling stuck on Skid Row.
Who doesn't feel like they have "issues?" We all have issues.
Love when the characters pull a straight face and announce, "You Have Low Self Esteem!"
We all want more, dream of the better, Yet...
At what price? What are you willing to give for those dreams?
Something is always draining the life (blood) out of us.
And So It Goes...

As much as I am for "Happy Endings," I am much more intrigued by the original ending...

Choose Wisely...

The saying goes,

"You Can Choose Your Friends but, You Can't Choose Your Family."

One might think that the saying clarify the freedom to choose the people in our lives. But...

Often times, if we are not conscientious, we might still let the wrong kind of people into our lives.

They may not be evil or scheming.  But, they can be critical, negative, self conscious, overly competitive, insecure,  overly dependent, needy.  I can go on and on.

In all relationships, including friendship, it's a two way street.  It needs to be a good match. Whether it be a stage of life, common interests, values, goals in life, personalities, there will have to be a mutual bond.

As we get older, friendships do not come by easily. Sometimes, those formed earlier in life, fade away.  If we are lucky, we will have a few good friends.  We are to share life with, to be a support to, to have acceptance from, to be ourselves!

So choose wisely, we only have so much room in our lives for people besides our family.  Hopefully, some of the family are also friends, but that's another time.

Just some food-for-thought on a non-descriptive Tuesday.

Good Eats Monday - Moms' Tricks for Treats


Moms are often the most innovative and creative when it comes to kids' stuff (maybe with the exception of this mom). I mostly rely on other moms.

I am almost always amazed by the crafts, the treats and snacks found online and family magazines. 
Here are a few ideas I found online...fun and festive.

32        Hershey's® Kisses® brand milk chocolates, unwrapped
1          package (11 1/2 ounces) fudge-striped shortbread cookies (32)
1          tube (4.25 ounces) orange decorating icing

- Attach 1 chocolate candy to chocolate bottom of each cookie, using decorating icing.
- Pipe decorating icing around base of milk chocolate candy.

Makes 32 cookies

1 piece black string licorice (16 inch), cut into 1-inch lengths
1 OREO CAKESTERS Soft Snack Cakes (I think this will work with regular OREO cookies also)
Red decorating gel

- Insert 4 licorice pieces into opposite sides of each snack cake for the spider's legs.
- Use red decorating gel to make the eyes.

Boo-Tiful-Pudding Cups

1 large pkg. (5.1 oz. each) JELL-O Vanilla Instant Pudding
3 cups  cold milk
3 or 4 drops of Red & Yellow food coloring
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
16 miniature semi-sweet chocolate chips

- Beat pudding mixes and milk and food coloring drops in large bowl with whisk 2 min. Stir in half of the COOL WHIP.
- Divide the Pudding 8 plastic cups.
- Drop remaining COOL WHIP by spoonfuls onto desserts to resemble ghosts. Add chocolate chips for the eyes.
