- Time doesn't wait for anyone, get with it.

I am sure there are many more, Blessings and Woes, Successes and Mistakes.
We must own them and be accountable.
It's our life to live and our path to walk.

2011 would almost be non-descriptive and unremarkable if you look too fast.
It was "All" about the daily grinds.
It was making a living; cooking the meals; caring for the children; fostering relationships; doing life.
Nothing extraordinary bad nor marvelously good.

It was good to be reminded,
He is good.
He is light.
He is peace.
He is joy.
He is more.
He is here.

I can deal with crisis and I know how to celebrate.
It is the everyday(ness) of life that trips me up.
At times, it just feels like the everyday(ness) of life is "not enough."

Then the song goes on with,

It is about being enough, feeling enough, having enough.
When I look closer and slow it down...

Movie Night - Extremely Loud and Incredibly Close

One Can Change Many...

For every year older, I have one less excuse Not to be myself!

I like double negatives. I enjoy writing in the "passive voice."
I am an optimist, but a realist at the same time.
I love visiting cities, but have no shame living in the burbs.
My clock is always 5 minutes early, but am always running 5 minutes late.
I believe in people, the human spirit; yet I believe there is a God who loves us all.
I am now used to the notion of being a Californian, but still a New Yorker at heart.

Somehow, I still believe that "Even one can make a difference."
One person can still change the lives of many.
Children are the ones who make us grown-ups wiser and more adult-like.
The eyes and sights of children always enlighten.

Hence...the movie Extremely Loud and Incredibly Close.
Funny that all the reviews are either "love it" or "hate it."
If a movie can encourage people to pick up the original book (to read) then...in my book...it's all good!


BTW...it's anti-climatic having your birthday 3 days after Christmas...

Turning Another Page...

Preparing for a New Year...

My Birthday is 3 days after Christmas and 3 days before New Year.
It's pretty anti-climatic (if you ask me).
I used to get a lot of "white elephant" gifts on my birthday.
Long ago, I decided that I will have to plan my own birthday if it was going to be something special.

As I have gotten older, the week after Christmas and before New Year has become very special in itself.  I can't help but to ponder on the year passed and anticipate the year to come.  It's Not just time, but also age.

How does one keep moving forward and onward, year after year?
Some years are harder than others.
Some years reaped more regrets and what ifs.
Other years overflowed with more gladness and fulfillment.
But always with some joy and thanksgiving.

Regardless of small steps or big leaps, each movement keep us in motion.
Seconds build up to minutes, hours to days, and life is lived one moment at a time.

How shall we then live?
- Measure life through experiences
- Keeping focus
- Look for the goods in life
- Learn from the bads
- Must have support and companions in the walk of life
- If we fall, we must dust ourselves off and get up again

Often I found where I should be going only by setting out for somewhere else

Good Eats - 2 Beers Beef Stew

Beer and Beef
...in a cold wintery night.

I think cooking food in beer is similar to cooking with wine.  It adds flavors and tenderize the meat at the same time.

Key #1 - Only cook with what you would drink
Key #2 - That way you can take a sip (or 2) while you cook
Key #3 - If the food doesn't turn out good, at least you had a good drink

Honestly though, this was very well received by the young and old at my house.
The kiddies at it with some rice on the side...the next day with pasta.
The adults had it with salad and some crusty bread.

So little work for such a great meal...less is more! Will definitely make again...and again...



2 Beers Beef Stew
Serves 8

2 pounds boneless stewing beef, cut into 1 1/2 inch cubes (use chuck or bottom round)
1/2 teaspoon salt, or to taste
1/2 teaspoon pepper, plus more to taste
1/2 teaspoon garlic powder
1/2 cup unbleached flour
2 tablespoons butter or vegetable oil or a combination
1 medium onion, chopped
6 garlic cloves, chopped
2 bay leaves
1 teaspoon dried thyme (or 2 teaspoon fresh)
2 bottles beer
1 tablespoon tomato paste
3 medium carrot, chopped
2 celery rib, chopped
6-8 potatoes, peeled, cut into 1-inch chunks
2 tablespoons of softened butter
2 tablespoons of flour
salt & pepper to taste

Combine salt, pepper and garlic powder  to marinate the beef for at least 2 hours
Add flour and shake off excess
Brown the meat with butter or oil
Cook in batches in a single layer to brown all sides
Transfer the meat into a Dutch oven or heavy pot with tight fitting lid
Add Onion and garlic to the pan and cook for 5 minutes
Add half the bottle of beer to deglaze the pan
Pour everything into the pot with the meat
Add tomato paste and the rest of the 1 ½  bottles of beer
Bring to boil…reduce to low/med hear and cook for 2 hours
Add the carrot, celery and potato and cook until tender (15 to 20 mins)
Combine the butter and flour with a fork until it become a paste
Add as much as needed to thicken the stew
Salt & Pepper to taste

It's a Magical Time of the Year...

We celebrate Christmas...
We believe in Christmas...

No matter where you stand on this, it's a magical time of the year.
Especially for children...

We began our wrapping, hoping not to have to pull an all nighter on Christmas eve.

The anticipation, the excitement, the build-up to Christmas morning are major markers of childhood.

Thinking way back to my own memories of this time of year, no matter what was happening in the world, in the family or in my life,   I knew in my heart of hearts that Christmas will be good.

The Gift of wonder will pave the way to all things new.
It's a time of celebration and peace.
The New Year will usher opportunity for change, for good to come.


May this time usher the same magic we used to feel.  

The anticipation, the excitement, 
the build-up to the gift of change and all things new...

May we remember the magic and create it for the ones we love.

Fun Thursday - Partying New Year's Eve 2011

New Year's Eve...is for grown ups!

I have long forgotten what it's like to be a grown up on New Year's Eve.

Having kids under the age of 12 make New Year's Eve just another night.

Okay...maybe a more "spirited" night.  Instead of a glass of wine, the glass might be filled with some bubbly.

We have yet to be able to stay up until midnight...seriously!
Nerdy Hubby and I joke about being "native" New Yorkers, so we celebrate New Year, East Coast time.  Tuck the kids in at 8 pm, pop the bubbly at 8:30 pm and out like a light by 9:01 pm.

Movie Night - 2 Very Different Nannies...for misbehaving children

Nannies of Your Choosing

One of my all time favorite movie came by the way of my childhood...Miss Mary Poppins.
I introduced it to my kiddies a few years back and we watch it at least once a year.
Something about the songs, the misbehaving kids, the ingenious consequences just bring assuring comfort that no matter how chaotic life gets, it will be okay.


Then, a few year back, I watched Nanny McPhee.
Oh so different, yet Oh so funny.
She is like the evil twin sister of Mary Poppins.
Except she is not exactly evil..."Just Different"...as we say in our house when we meet people who are a bit...Different.


Having Manners, Kindness and Courtney on my mind, these pre Super Nanny nannies, bring a smile to my face.

As kids are beginning Winter/Christmas break, us parents have to laugh when we can.

To Be Kind and Courteous

Rushing in and out, here and there...
That seems to be the norm for the days leading up to Christmas and New Year.

So much emphasis is being put on expressing love yet, people in general are actually less kind and courteous than any other seasons.

Road rage, "check out" line rage, pushing and shoving are common place.

Questions to ask ourselves:

- How much more time would it take to be polite?

- Are our communication thoughtful and cordial?

- Are our manners and mannerism a true representation of ourselves?

- Are we taking advantage of the kindness of others?

- Are we presenting ourselves respectfully and considered of others?

Good Eats - Matzo Ball Soup

Matzo Balls for a Rainy Winter Night
Matzo...Matzo...Matzo

So tricky but oh so good.
Will they float this time?
Will they be tender or "hard core"
Cover or Not to Covered?

So many questions, so little answer.
Each time, just literally praying for a fluffy, tender globe of goodness.

Try it with seltzer water, baking powder, and this time...We will "whip" the eggs.

May Luck be on our side!


Matzo Balls

Ingredients
5 eggs
1/2 teaspoon kosher salt
1/2 teaspoon ground white pepper
1 tablespoon chicken stock
3 tablespoon vegetable oil
2 teaspoon of grated onion
1 cup matzo meal

Directions
Beat the eggs, oil, stock and seasonings in a mixing bowl. Fold in onion and the matzo meal and mix until fully incorporated.
Cover and refrigerate for a minimum of 2 hours, or overnight.
Boil 12 cups of water and 1 tablespoon of salt in a 4 to 5-quart saucepan.
With greased hands, roll the batter into about 12 balls, a little smaller than ping-pong ball size, and drop into the boiling water.
After about 5 minutes the matzo balls will begin to rise to the top of the water, and you can stir them gently.
Reduce to medium heat and simmer for 30 minutes.

Serve in chicken soup.Cooked matzo balls may be stored in the refrigerator, covered in water, up to 3 days.

Being Relevant...???


RELEVANT
...is actually a magazine (click to see link)
...about God, Life, Progressive Culture

The word though, came up several times this last week.
...what is a relevant toy for a 6 year old
...what does a relevant parent/child relationship looks like when the child is now an adult
...how does one make math relevant to a 10 y.o.
...what is the relevant of this Christmas season to people in general

Being Relevant...is a true struggle.
It's contextualization.
It's expressiveness.
It's the mean and method to valuable messages.
It's relational, factual, educational, meaningful.

It's almost sad, yet not shocking to me that being "Relevant" is dominated by the business of marketing.
It really should be dominated by people who care about God, Life, and Culture.

Just something I struggle with and weights on me...So I Share.

Power of Vulnerability

Turning Weakness into Strength...

For many who had ever looked for a job, applied and interviewed for a job, the ever dreaded question is "What are your weaknesses and how have you handle them?"

During my recent interview someone actually said, "Your resume looks perfect and your answers are informative and insightful (for the job), so now, show me your flaws."

I had to chuckle (to buy some time and to think fast).  I told the interview panel to call my husband because he has the list.

Brene Brown is a researcher (social work) focused on vulnerability, courage, authenticity and shame.
She started with connection, the core of what give human life purpose and meaning.
She asked people about love and connection, what she was getting were stories about disconnection.

Many felt shame and fear, not feeling good enough to be genuinely connected.
Not able to be vulnerable, not allowing the "self" to be seen.
Fearing that,
"If you get to know me, really know me...You will not love/like me."

This is not news to many of us...But...

The ultimate finding and suggestion was To Live Wholeheartedly.
We are to find the courage to be imperfect.

We are born to be imperfect, wired for struggles, 
But we are also worthy of love and meant for belonging.

Instead of  numbing out, pretending to live life, we are to to be vulnerable.
That is the crossroad of fear and joy.

To feel vulnerable is to be alive and the genuine reminder that we are good enough to be a part of...and worthy of connections.

By the way...I did get the job even after I told them that I can be hyper-focused on task at times. I can have overly high expectation of myself and others. And I am definitely still working on my perfectionist traits.

No...This is Not our house.
We are the opposite...almost minimalist with our Christmas lights.

Our block is (almost) being frowned up because 1/2 of our block takes the minimalist approach where as the other 1/2 is much more elaborate.  One has 5 Christmas blow ups.

Overall though, we enjoy Christmas Lights (watching). We are getting more and more excited as school draws to a close.  We can stay up longer and go Christmas Lights hunting.  We drive around different blocks, different areas, even different cities on occasions.
Bring a thermos of hot cocoa and turn up the Christmas music!

Home to the famous ice cream manufacturer, this estate sits on 3.5 acres and is decorated with 10,000 colored lights and numerous holiday depictions. Although there were rumors in 2010 that this home was dark, we have received on-the-ground confirmation that the homeowners are setting up the lights this week! (December 7, 2011)

This is the sister street to Christmas Tree Lane in Altadena. What to do with Toxic Relatives?

Know when to draw the line - Enough is enough
Allow "Natural Consequences" - Stop protecting 
Decide how you want to relate to difficult family members - Take back the control
Distance is okay - Boundary is essential
Don't expect the person to change - We only have control over our own reactions and responses
Prepare for the worst and hope for the best - Face up to reality

We may be hoping for a picture-perfect family... 

But, Sometimes it's just smarter to be prepared...

Good Eats - Turkey Potato Empanadas

Turkey...Potato...Cheese...

I can still smell the buttery aroma seeping from the oven.  Yummy!

Yes. this is the last of the Thanksgiving frozen leftovers.  So needed yet so sad.

I sometimes call this Thanksgivings in a bite.
It has the entire Thanksgiving dinner all rolled up in dough...puff pastry dough no less!

Ingredients:
1 Package of Puff Pastry (2 sheets) or 2 refrigerated tubed biscuits
1 1/2 cups leftover turkey, diced or shredded
1 1/2 cups mashed potatoes
about 1/2 to 1 cup turkey gravy (the mixture should be moist, but not liquidy)
1 cup of shredded cheddar cheese
Egg Wash - 1 egg plus 1 table spoon of milk
Paprika

Direction:
In a medium bowl, mix turkey, mashed potato gravy and cheese, set aside;
Cut Puff Pastry into small squares
(cut biscuits into halves, then flattened on a parchment sheet over a cookie sheet)
Put a heaping teaspoonful of the mixture onto the dough, then fold into triangles, use a fork to seal the edges.
(fold biscuits into half circles, then seal the edges with fork)
Brush egg wash over top and sprinkle lightly with paprika
Bake puff pastry for about 20-25 minutes, until golden brown
(Bake biscuits for 15 minutes)

Serve warm with extra gravy and cranberry sauce.

Had the privilege of watching and experiencing him tonight conducting the Angeles Chorale.

He is intense, yet effortless. He is serious, yet expressive.
It was a more pure, less decorated Messiah.

In his own words...Handel wrote Messiah for the public, in a concert hall with more jazzy spirit than the music styles which came before.  It's not about evangelizing Jesus; but the Story, the Essence of who Jesus was and stand for even now...the message of peace.

Algorithms; Regrets; Word; Driveless Car; Freedom on the Internet; Risk that Harms; Less is More...

One of my favorite so far is Kathryn Schulz.  She is no stranger to me.  She is the author of a book I recommended, "Being Wrong."

This time, she is talking about regrets. She is talking about it in terms of "Behavioral Economic."
Yet, sounds very much like common sense, life strategy to me.

At the end, she suggest that it is human and humane to have regrets.
Rather than finding ways "To Live Without Regrets," we should try to find ways "To Live With Regrets."
Regret is...
- Universal
- Somewhat Humorous (in hindsight or if our life was a movie)
- Never as Ugly as we though at the time

I love her closing statement.

The point isn't to live without any regrets. It is to Not hate ourselves for having them.
...We need to learn to love the flawed, imperfect things that we create and to forgive ourselves for creating them. Regret doesn't remind us that we did badly, It reminds us that we know we can do better.

Fun Thursday - Dickens' A Christmas Carol

Dickens' A Christmas Carol...

Aside from the Nutcracker Ballet, this is the other classic of Christmas.
Whether it's the book, the movie, the play, or even Veggie Tales, everyone knows the general story.

Ebenezer Scrooge, Tiny Tim, the Spirits of Christmas, Past, Present and future, we all know the characters.

No matter how many times we experience the story; no matter how the story is told, we all long for the happy ending.  Ebenezer's ultimate change of heart is what we cheer for.



We go experience this Christmas classic often for fun.  Maybe this year, especially, we can aim also to be changed (even just a little) by the experience.

Movie Night - White Christmas with Bing Crosby

We used to listen to the recording of White Christmas over and over.

My dad LOVE Bing Crosby and Fred Astaire.
Obviously one for the singing and one for the dancing.
I think he has always been a romantic.

Didn't get to watch the movie until I was like in Junior High.  Yes, it has been that long.

So to watch the movie again, bring back a lot of memories.  The singing and the dancing were just as beautiful as I remembered it.  The romantic mix-ups were the backbone of  these musicals. Kind of funny and a bit cheesy.  You have to watch it from the perspective of its context.  No matter how you view it, it was thoroughly enjoyable.

To Set the Mood for the Holidays...
Just for the nostalgic value...I give it a 10+!
